We imagined a debut, we wanted a wine that spoke of us and our origins. As true Emilians, it could only be this: the king of Lambruscos, the Sorbara.
1241 bottles: a thoughtful harvest, a heartfelt project.
We asked ourselves: “Would you drink this bottle?” The answer, now, we leave to you.
The summer of 2024 was unstable, characterized by fluctuating temperatures and rain that was never excessive but constant.
We harvested a small portion of grapes to make the starter on September 6, crushed and destemmed and macerated with their skins. The rest of the mass was harvested on September 10 (just before heavy rain that would have changed the course of this story), gently pressed and only the free-run must was kept, settling statically for twenty-four hours. The alcoholic fermentation was started with the starter (indigenous yeasts) and divided 70% in fiberglass and 30% in used barriques. Once the masses were blended and stabilized with cold, on January 30, 2025 we bottled for refermentation with the must (frozen at harvest) to create the sparkle with indigenous yeasts.
